Most unexplained are Ornstein and Smough, who are guarding Gwynevere, so I don't think they've hollowed, as they also show other intelligence (such as obtaining the other's power after defeat), but rather than escort you to Gwynevere so you might fulfill the prophecy, they just murderize you. If Gwyndolin/Gwynevere wanted you to come to him/her and obtain the Lordvessel, why have all the Giant Sentinels attack you? Or the demons that take you from Sen's Fortress and drop you off in Anor Londo, leaving you alone, and then attacking you as you reach Gwynevere. Some of these make sense, like the Painting Guardians who are just defending Ariamis, and the Silver Knights who have gone hollow(?), but a lot of questions remain. There's a lot of good examples, so I'll be somewhat chronological. I'm referring to some of the enemies in Lordran, who you have to fight for no real reason.
